Moroccan Chicken with lemon and raisins

This Moroccan lemon chicken recipe is easy to make, delicious, low-carb, and healthy. During those busy weekdays, you can prepare this meal quickly and eat it for lunch and dinner.

If vegan, use tofu instead of chicken. If pescatarian, use your preferred fish.

This chicken recipe can be served with your favorite side of veggies or with a simple salad. Check out my fermented lemons recipe here. If you don't have access to fermented lemons or don't have time to prepare them, use fresh lemons instead.

RECIPE

Ingredients 

6 lbs chicken, approx 2700g 

15 medium garlic cloves, halved

one red small onion, julienned

3 Tbsp avocado oil

1/2 green cabbage, shredded 

1 cup raisins

1 cup water

3 preserved lemons, cut in quarters, or 2 fresh lemons 

spices: 2 Tbsp paprika, 2 tsp cumin powder, 2 tsp ginger powder, 2 tsp turmeric, 1 tsp cinnamon, 1 tsp ground pepper, 2 tsp pink Himalayan salt, and 4 Tbsp olive oil

Instructions 

  • Make the marinade by combining all the spices and olive oil into a paste; 

  • Prep your chicken, add the marinade, mix well, and marinate for at least 2 hours in the fridge- it's recommended to marinate your chicken overnight for more flavor; 

  • Coat the bottom of your baking tray with avocado oil, and add the shredded cabbage- it will ensure moisture so your chicken doesn't dry out; 

  • Place the chicken over the cabbage, and add the garlic, onion, raisins, and preserved lemons between the chicken pieces; 

  • Add the water, and bake for 50 minutes at 420F, or until fully cooked;

  • Serve with veggies of choice, preferably low-carb cruciferous vegetables like broccoli, Brussels sprouts, cabbage, or asparagus.
