Bean tomatillo corn salad
Who doesn't love an easy rainbow bean salad, perfect for hot summer days?! This bean salad is packed with fiber and antioxidants and is easy to make.
The health and weight loss benefits of beans are extensive. Beans are also a clean source of protein and resistant starch and should be eaten often as part of an anti-inflammatory diet.
Considered a functional fiber, resistant starch actually resists digestion, feeding the healthy bacteria, which in return, produce healing constituents like short-chain fatty acids. Resistant starch helps lower blood sugar levels and insulin spikes, promotes fat burning, and gives a satiety sensation.
RECIPE
Ingredients
2 cups boiled mixed beans or beans of choice
1 avocado, cut into small cubes
6 medium red tomatoes, diced
6 small purple tomatillos or purple/yellow tomatoes
1/2 cup sweet yellow corn
2 Tbsp red onion, diced
3 Tbsp cilantro, chopped
2 Tbsp lemon juice
1 tsp Himalayan salt
1/2 tsp ground pepper
5 Tbsp olive oil
Instructions
Prep and cook the beans as explained in the fermentation chapter;
Chop all the veggies and mix all the ingredients;
You can add protein (meat, eggs, sardines) as needed;
Serve with GF tortilla chips.
